Pairing Cheese and Wines

There are no hard-and-fast to pairing wines and cheeses, only guidelines. The key is balance. White wines are easier to pair with cheese because many are fruity, rather than dry.
Pair dry wines and most young red wines with aged cheese.
Pair fruity, acidic white wines with equally tangy cheese.
Pair bigger, bold wines with spicy cheeses with high acid levels.
Pair rustic, assertive red wines with piquant cheeses such as medium to hard Italian cheese.
For rich desserts with cheese, pair with highly sweet dessert wines.
Pair wines and cheese from the same region, such as Italian Chianti with Asiago

Pairing Cheeses with Beer

Light beers go with lighter cheese; strongly Flavoured beers need assertive cheese.
As a general guideline, equate lagers to white wines and ales to red wines
Some cheese pair better with beer than wine. More powerful cheese challenge wine. Beer’s more bitter flavour and effervescence counter the richness of aged cheese and cleanse the palate.
Yeast beers go well with aged cheese, served with crusty bread.
