This may be the most beautiful fruit of them all; each is like a fistful of glittering rubies, drawn into a smooth, round purse. Inside the leathery skin, clusters of gently faceted capsules packed in a honeycomb arrangement are guarded by cottony, bitter pith. The opened pomegranate, with its blood red juice and dark seeds spilling from ivory bindings, has been a vibrant emblem of fertility and resurrection for millennia. It is also one of the oldest fruits known to man, a treasure from the cradle of Western civilization. Some people argue that the fruit of the Tree of Knowledge plucked by Eve was not an apple at all but a pomegranate. Each sharply flavored seed is sealed in a translucent capsule of subtly floral-pink juice. The seeds are edible, and they are commonly used as a striking garnish—sprinkled over everything from salads to desserts—or as an exotic flavoring element, generally in the form of a juice or sweet, tangy molasses. Pomegranate juice makes a refreshing drink and is well suited for a wide range of cooking because it retains its bright-red color; whole seeds will darken when heated. Most often the pomegranate’s function is merely a decorative one, what a pity, since its flavor is just as appealing as its form.
