This balsamic undergoes the longest ageing process spending 5 years in a larger oak barrel before being transferred to a smaller chestnut barrel for another 3 years.

 

Made from 100% Trebbiano concentrated grape must, it is considered by the Fiorini family to be the truest expression of the traditional balsamic vinegar production method.

Its resulting organoleptic charastsitics yield the same dark and deep yet brilliant brown colour consistent with other balsamics, but a more broad, complex and penetrating bouquet with a smooth, slightly sweet taste piqued by a pleasant acidity that results from the unique ageing process.
