Iranian Beluga Sturgeon (Code #1)

Beluga is the largest and rarest of the Sturgeons and the only specie that is exclusively carnivorous.  It can measure up to 6 meteres or 20 feet in length and live for more than one hundred years.  

The Beluga Stugeon can take up to 25 years to reach maturity.  The fish harvested for this caviar can reach up to 2,000 pounds (900 kg).

The eggs themselves are the largest among the Sturgeon family, and range in colour from dark gray (almost black) to light gray.

This particular caviar has a very distinctive rich, creamy flavour with a delicate texture.
