  • This Roquefort cheese has an ivory, creamy white paste with beautiful blue veins. Its texture is velvety and melts in your mouth (fondant), starting with subtle hints of undergrowth and then revealing its full, refined aroma.
  • Gabriel Coulet cheeses are hand-molded, hand-salted, and then matured in their own natural, rocky cellars (called 'fleurines'). These unique, cool, humid caves are where the special Penicillium Roquefort develops, giving the cheese its distinctive character.
