The meats are ground and delicately flavored with spices and herbs, including cloves, pepper, nutmeg, cinnamon and wine!Cotechino is often mentioned (and eaten) alongside what is considered its “son”, Zampone!
Cotechino has lean, firm meat, flavoured with spices and natural aromas. The container of the cotechino is the bowel, according to traditional methods of preparation, while the zampone is made into sausages by using a natural sheath consisting of the the skin of the pig's feet, which gives it a very peculiar taste.
