Medium-to-full bodied with strong opening notes of green olives and a breadth of herbaceous and herb aromas followed by hints of artichokes, thistle, and tomato leaves. Complex, elegant, harmonious, this olive oil is perfectly balanced with a pleasant bitter and peppery finishing aftertaste. High in polyphenols, a natural antioxidant.


Ideal for use with typical Mediterranean dishes such as couscous with fish, caponata made eggplants, zucchini and celery, and any grilled or baked vegetables. Also excellent as a topping on soups (such as crème of vegetables), grilled meats, fish, seafood, and assorted pastas.
