Saskatchewan’s Three Farmers Company has produced a stunning and complex oil from a little-known heritage seed. For generations, Camelina sativa has been sidelined by the food industry because it is unsuitable for the manufacture of margarine; currently, however, artisanal camelina oil is enjoying serious buzz. Its high Omega 3 and vitamin E content are part of the appeal, but here’s the interesting part: This oil offers an earthy, unique almond-and-cauliflower flavour, which sounds odd but tastes delightfully drrrty.
