To make an authentic Bellini, you need to go to the source, Harry's Bar in Venice, where Giuseppe Cipriani first mixed peach and prosecco to make the now classic cocktail which never fails to evoke summer.
Cipriani has created its own white-peach purée Bellini mix which turns the drink the colour of sunset. Mix with prosecco wine and, if you like to be traditional, serve in a thin tumbler. We would like to toast... simplicity.
