Grès d’Alsace is an unpasteurized soft cheese with an orange, washed rind and creamy paste. It has a fern leaf from Vosges placed on its upper side. This cheese is a smoother version of the well-known munster from Alsace Lorraine. It has been created by the founder of Fromi, M.David. This cheese is produced by the Fischer Factory located in Beblenheim, in Alsace. The Marcel Petite company has been ripening Comté cheeses in the heart of the Jura mountains for 5 generations. This small company has become one of the most famous ripeners in France and the world. Marcel Petite seeks to nurture the maximum potential in each wheel of Comte it matures. Throughout the ripening phase, the challenge is to peak each wheel when mature, at its optimum quality, without using age as the main reference.
