We’re an independently owned and operated butcher located inside Vincenzo’s in Waterloo. Since 2010, we’ve been providing the Kitchener-Waterloo area with ethical and sustainably raised meats from our growing network of small, local farms. We search out farmers and producers who are committed to raising top quality meats by giving their animals a happy, healthy life, so that you can be sure you’re getting a better tasting and healthier product.
We’re proud of the meat that is raised in this province, and we’re proud to work with some of the best producers in Ontario. We’ve been lucky to partner with some great farmers who believe, like us, in raising their livestock with respect for the animal and the desire to produce for quality and flavour over efficiency and speed. We like to think of ourselves as a go-between, to help connect these amazing producers with the consumers in the Kitchener-Waterloo area who are looking for a local, ethical, and sustainable source for top quality meats.

BBQ Sauce
BBQ sauce is a tangy and often sweet sauce that is used to baste, marinate, or glaze meats during grilling or barbecuing. The base of BBQ sauce typically includes ingredients like tomatoes, vinegar, molasses, or brown sugar, along with a variety of spices and seasonings.
Regional variations exist, such as Kansas City-style (thick, sweet, and smoky), Texas-style (bold and spicy with a tomato and chili base), Carolina-style (vinegar and mustard-based with tangy flavors), and Memphis-style (sweet, tangy, and tomato-based).
BBQ sauce can be brushed on meats during cooking, used as a dipping sauce, or served alongside grilled or barbecued meats.

Lamb Spiedini
Lamb Spiedini, also known as Lamb Skewers or Lamb Kebabs, is a dish that originated in Italian cuisine. It typically consists of small pieces of lamb meat that are skewered and cooked over a grill or open flame.
To prepare Lamb Spiedini, tender cuts of lamb, such as leg or loin, are cut into bite-sized pieces. The lamb pieces are then marinated in a flavorful mixture, which can vary depending on personal preference or regional variations. Common marinade ingredients include olive oil, garlic, herbs (such as rosemary or thyme), lemon juice, and spices like cumin or paprika.

Halloumi
Halloumi cheese is a semi-hard, brined cheese that originated in Cyprus, but it is now popular and enjoyed in various parts of the world. It is unique in that it has a high melting point, which allows it to be grilled or fried without losing its shape.
Texture: Halloumi has a firm, slightly rubbery texture. It has a characteristic "squeaky" or "chewy" bite, which is retained even after cooking. This texture makes it suitable for grilling or frying.
Taste: Halloumi has a salty and tangy flavor, with a hint of sweetness. The brining process contributes to its distinctive taste. It does not have a strong aroma but develops a pleasant savory profile when cooked.
Ingredients: Traditional Halloumi cheese is made from a mixture of sheep's and goat's milk, or sometimes cow's milk. The combination of these milks gives Halloumi its unique taste and texture. However, variations using only cow's milk are also available.
Cooking: Halloumi cheese is known for its versatility in cooking. It can be grilled, pan-fried, or even baked. The high melting point allows it to retain its shape and develop a golden crust when cooked, while the interior becomes soft and slightly gooey.
Serving: Halloumi is commonly used as an ingredient in various dishes or served on its own. It is often featured in Mediterranean and Middle Eastern cuisines. Grilled or pan-fried Halloumi is a popular addition to salads, sandwiches, or mezze platters. It can also be enjoyed as a standalone appetizer or snack.
