This special oil is crafted by the Galantino family using the ancient and delicate method of "affioramento." Before the olives are pressed, a small amount of oil (only about two or three percent of the total) naturally rises to the top of the crushed olive paste. This "emerged" oil is then carefully skimmed by hand. Because it is not subjected to any extractive force, the resulting oil has a uniquely full-bodied appearance and a perfect harmony between its aroma and taste.

This Affiorato oil has a beautiful golden-yellow colour and a clean, pure scent of fresh olives. Its flavour is mildly fruity with delicate herbaceous notes, making it an exceptionally smooth and balanced oil. To best appreciate its unique character, it should be used raw. Drizzle it over baked or grilled fish, white meats, fresh salads, and other delicate dishes just before serving.
