Le Cousin from Fromagerie Médard : Pasteurized cow milk, washed rind, soft paste. Le Cousin is a farmstead cheese made from Brown Swiss cow whole milk. Its soft paste is covered with a beautiful orange coloured rind that brings mild notes of cream and butter. Canotier de l’Isle from Fromagerie de l’Isle : Unpasteurized cow milk, washed rind, firm paste. Under the delicate rind of ocre shades, the ivory paste reveals the very typical taste of hazelnut, with pleasant fruity and creamy notes. Chemin du Brûlé from Fromagerie La Station : Farmstead cheese made from organic unpasteurized cow milk, washed rind, semi-soft paste. The washed rind cheese is characterized by a thin line of vegetable ash in its centre, a smooth melting texture and exceptional notes of fresh butter and hazelnuts.
